MAPLE & WALNUT GRANOLA (A LA DELICIOUSLY ELLA)

Ingredients

90g Coconut Oil
160ml Maple Syrup
Grated Zest of 1 Orange plus half the juice
4 Tsp Ground Cinnamon
I Vanilla pod split lengthways & seeds scraped out (or 1 tsp high quality vanilla extract)
400g Jumbo Oats (I use Gluten Free)
70g Sunflower Seeds
50g Pumpkin Seeds
40g Flakes Almonds
40g Walnuts
60g Coconut Chips
100g Raisins

Methods

Preheat the oven to 160°C (fan 140)
Line a large shallow baking tray with baking paper.

Heat coconut oil and maple syrup over very low heat until liquified. Turn off heat and add orange juice, cinnamon & vanilla.

Mix the rest of the ingredients together in a big bowl except for the raisins and coconut chips. Pour the maple mixture in and stir until all the dry ingredients is coated.

Spread evenly on the baking tray and bake for approx 45 mins, stirring every 5 mins until the whole batch is golden brown.

Add the coconut and raisins for the last 5 minutes. By this point your home will smell like dreams.

Remove from oven and leave tray to cool on a wire rack.

Scoff! If there's any left to store, make sure it has cooled completely before popping it in a Kilner jar or an airtight container. Avoid plastic if possible, keep mother nature and your belly happy!

Backed full of vitamins, minerals, good fats and omega 3's this is an insanely good way to start the day (or in my case snack on constantly throughout the day)
Great with plant based milk/ yogurt
